Semester 1: Foundation & Core Baking Arts
In your first six months, you will build a rock-solid foundation, mastering essential doughs, batters, and core baking techniques.

Unit-1: Bread Making

Build a strong foundation in bread making through a wide variety of classic, international and specialty breads. This unit covers everyday breads, rolls, pizza, artisan breads, enriched breads and traditional bread preparations.

Covers: White Bread, Brown Bread, Burger Buns, Submarine Rolls, Atta Thin Crust Pizza Base, Fresh Pizza with Toppings, Dinner Rolls, Bread Sticks, Garlic Bread, Focaccia, Lavash, Pita Bread, Semolina Bread, French Baguette, Multi-grained Bread, Challah Bread, Atta Kulcha, Babka Bread, Brioche, Cinnamon Rolls, Baba au Rhum, Fruit Savarin and Harlequin Bread.

Unit-2: Sour Dough & Bread Display

Explore specialty bread techniques through Sour Dough preparations and creative bread display items. This unit introduces students to both plain and multi-grained sour dough along with practical bread display work.

Covers: Sour Dough – Plain/Herbs, Sour Dough – Multi-grained, Bread Basket and Crocodile.

Unit-3: Cookies Making

Develop practical skills in preparing a diverse range of cookies and biscuits. This unit covers classic, chocolate, nut-based, piped and flavoured cookie preparations using a variety of techniques.

Covers: Butter Cookies, Chocolate Fudge Cookies, Choco-chip Cookies, Salted Jeera Biscuits, Naan Khatai, Besan Naan Khatai, Custard Cookies, Multi-grain Atta Cookies, Cornflakes Cookies, Piped Cookies, Cat’s Tongue Biscuits, Nut Cookies and Ginger Bread Cookies.

Unit-4: Muffins & Cupcakes Making

Learn to prepare a selection of muffins and cupcakes through practical bakery training. This unit includes eggless, chocolate and fruit-based muffin preparations along with classic cupcake varieties.

Covers: Vanilla Muffin (Eggless), Choco-lava Muffins, Chocolate Muffins, Blueberry Muffins, Vanilla Cupcake and Chocolate Cup Cakes.

Unit-5: Puff Pastry Products

Master a variety of puff pastry products through hands-on preparation. This unit covers savoury and sweet puff pastry items along with classic pastry shapes and filled products.

Covers: Bombay Khari Biscuits, Vegetable Puff, Palmiers, Cream Rolls, Cheese Straws, Apple Strudel and Vol au Vent.

Unit-6: Dry Cakes & Sponge Cake

Explore both dry cake and sponge cake preparations through a variety of egg, eggless, pre-mix and flavoured cakes. This unit builds a strong foundation in different cake bases and preparations.

Unit-7: Icing, Frosting & Dummy Cakes

Develop professional cake decoration skills through frosting, piping and nozzle work. This unit progresses from frosting equipment and basic techniques to dummy cake icing and cartoon cake designs.

Covers: Basics of Frosting & Equipment, Piping Techniques & Nozzle Work, Icing & Frosting Practice, Cake Icing & Frosting Dummy Cake and Cartoon Cakes Frosting-Dummy.

Unit-8: Chocolate Work & Cream Cakes

Advance your cake-making skills through chocolate artwork and a wide range of cream cake preparations. This unit combines decorative chocolate work with popular classic and specialty cream cakes.

Semester 2: Advanced Patisserie, Decoration & Confectionery
In your final six months, you will advance to highly technical skills, focusing on presentation, complex sugar arts, and international techniques.

Unit-9: Mirror Glazed Cakes, Pastries & Jar Cakes

Explore modern cake presentation through mirror glazing, individual pastries and jar cakes. This unit introduces students to contemporary bakery presentation and attractive individual dessert formats.

Covers: Mirror Glazed Cake, Chocolate Mirror Glazed Cake, Marbled Mirror Glazed Cake, Chocolate Pastry, Vanilla/Pineapple Pastry and Jar Cake.

Unit-10: Designer Cakes & Cheese Cakes

Develop specialized cake-making skills through creative designer cakes and classic cheesecake preparations. This unit focuses on decorative cake concepts along with both cold and baked cheesecakes.

Covers: Designer Cake – Doll, Designer Cake – Car, Cold Cheese Cake and Baked Cheese Cake.

Unit-11: Fondant Cakes

Unit-12: Pies, Tarts & Choux Pastry Products

Covers: Plain Molded Chocolate, Rock Nut Chocolate, Chocolate Truffles, Chocolate Granola Bars, Coconut Macaroons, Almond Macaroons, Entremet and Zu Zubes.
